At Boann we pride ourselves at sourcing a wide range of the best casks from the best suppliers in the world. Each cask is hand picked and our wood programme is one of the most diverse in the country.

Ex-Bourbon Barrels: 200 litres, American Oak. Vanilla, caramel, light spice, light coconut.

Bourbon barrels are the backbone of the global whiskey industry. They are the basis for the maturation of most Irish whiskeys.

Ex-Rum Casks: 200 litres, American Oak. Brown sugar, vanilla, light nuttiness.

Rum barrels deliver a subtle, yet fantastic sweetness to whiskey spirit. These casks started their lives as ex-bourbon barrels before being used to mature tropical rums.

NEOC: 225 litres, French Oak. Fresh fleshy red fruits, creamy mouthfeel.

New Era Oak Cask (NEOC) is a proprietary cask type from ASC Cooperage in France. These barrels are premium upgraded barrels, that started their lives as incredibly premium French wine casks before being selected by their traditional coopers to be hand shaved and re-toasted, unlocking a wonderfully creamy and fruity cask.

Moscatel: 225 litres, European Oak. Dark fleshy and tropical fruits.

These casks come from an incredibly premium Portuguese Moscatel producer. Moscatel is a naturally sweet dessert wine that is fortified after fermentation, in a similar way to Pedro Ximenez Sherry. These produce deep full bodied, sweet fruit notes in the cask. Moscatel is the original European fortified wine, made with at least 85% Moscatel de Alejandria grape varietal. These should not be confused with the US counterpart Muscatel, which utilises the US Muscat grape.

Madeira: 225 litres, European Oak. Light fruity character, led by citrus and berries.

This is a fortified wine from the Portuguese Madeira island, off the West Coast of Morocco. These sweet wine casks produce a subtly sweet profile that pairs brilliantly with single pot still whiskey, offering an abundance of fruit to the profile.

Fino Shery: 225 litres, European Oak. Dry, nutty, with slight salinity.

This is a fortified wine from the Portuguese Madeira island, off the West Coast of Morocco. These sweet wine casks produce a subtly sweet profile that pairs brilliantly with single pot still whiskey, offering an abundance of fruit to the profile.

Port: 225 litres, European Oak. Bold, sweet, fruity flavours.

Port is the traditional fortified wine from Portugal. Made exclusively in the Northern valleys of the country, these Ruby Port casks have a fantastically fruity and vibrant bouquet that they imbue brilliantly on the maturing spirit.

Marsala: 225 litres, European Oak. Citrusy, with ripe tropical fruits.

These casks are from the Sicilian city of Marsala, in Italy, where this famous fortified wine is produced. Marsala casks offer a lighter impact, compared to some other fortified alternatives, but the subtlety offers a juicy bouquet of citrus and tropical fruits to enjoy. Fantastic option for long maturations.

Oloroso Sherry: 250 and 500 litres, European Oak. Dried fruits, sultanas, raisins, light nuttiness.

This is the most famous sherry cask style used in whiskey today. These semi-dry sherry casks are not as dry as their Fino counterpoints and famously imbue flavours of dried fruits, sultanas and raisins, with a small amount of nuttiness. Next to bourbon barrels, these are the second most famous whiskey casks in the whiskey world.

Pedro Ximenez: 500 litres,  European Oak – Tart Cherries, Raisins, Stewed Sultanas, Light Cinnamon.

PX is likely one of the most famous styles of dessert wine casks used in whiskey production today. Made with juicy, sticky sweetness in mind, PX casks are known to produce full bodied and flavoursome spirits.
